The Crusade for Better School Food – Making a Real Change

Recently, the media have reported new findings regarding the increase in diabetes in children and its serious consequences. This news has once again sounded the alarm about the growing epidemic of obesity among our children and youth. The problem is so serious that experts are recommending drastic changes in the way our children eat. But could complacency, denial and ignorance among the adult population prevent our young people from getting the help and education they need to make these drastic changes?

During a recent school screening visit to a top-ranked eastern college for one of my daughters, I had the opportunity to raise questions about the quality of food available through the campus cafeteria. Was the food served at their school pesticide-free? Was it non-GMO? What about meat sources? Were the students who were served factory farm animals injected with hormones and antibiotics? Were there natural, healthy and organic food options available in the cafeteria – as adopted by some of the most advanced schools across the country such as Yale, UC Berkley, Duke and Oberlin Colleges?

The question seemed to stump the college staff member. She said she was not sure about the quality of the food at the cafe. She didn’t know if there was any kind of focus on providing students with natural, vegetarian or organic options. It wasn’t clear if the school offered snacks that addressed some of the serious health concerns Americans are facing at younger and younger ages… visions of an array of fried foods, processed starches and sugary sweets covering the cafeteria trays, floated past me. the eyes.

This reaction seems somewhat typical of school professionals at every level of education. I recently had the opportunity to ask the food service directors of our local educational institutions about food quality and education in elementary, middle, and high schools. I was told that kids wouldn’t eat healthy looking food and that they only wanted the kind of food that you can find in any fast food restaurant. They further implied that it was not the responsibility of the school system to provide healthy food options for children. That’s the parents’ job.

While I agree that healthy eating habits start at home and that parents should demonstrate to their children in the kitchen and at the dinner table, this does not absolve our education system of its responsibility to teach good nutrition. . Our schools should provide information and training on the elements of a good diet and should lead by example. This means clean and healthy cafeteria food. And healthy does not and should not mean “unpleasant to children’s tastes”. Healthy, natural food, prepared with good recipes, can be much tastier than the fast food that now dominates the school cafeteria lunch menu.

Unfortunately, political concerns have hindered the progress of the campaign for better school meals. We cannot afford to turn a blind eye to this important issue and allow large food conglomerates to dominate school cafeteria fares simply by default.

Healthy Eating from Romper Room to Retirement

A foundation for lifelong healthy nutrition begins in early childhood. If we introduce children to healthy, natural foods, give them dietary knowledge and teach them how to prepare delicious meals, they are likely to carry good eating habits into adulthood.

Taking children to the local farmer’s market to buy produce is an example of expanding the way we learn and buy food.

We need a revolutionary approach to change our food system. Getting school meals in the cafeteria is vital if we are to avoid childhood obesity, malnutrition and disease caused by poor quality food for our young people. The evolution of food on our planet depends on a gentle but strong revolution in the market, kitchen and cafe.
